My own Almond-Oatmeal

Ingredients:
2 Tbsp instant oatmeal
1 cube frozen almond [Almonds soaked then blended then frozen into cubes !]
1 cup 2 % Organic Milk

¼ tsp honey
½ tsp raisins
½ tsp craisins

Heat Oatmeal,Almond cube, Milk in a bowl for a minute. Add raisins,craisins or your child’s choice of dried fruit .Adding honey is a choice. I add honey in oatmeal/milk during winter and specially when my daughter has cough or cold.

Yellow Split Pea Lentils

I cook lentils in a pressure cooker. It saves energy and is many times quicker than cooking lentils or rice in a covered pan . If you don't have a pressure cooker, you may try slow cooker or rice steamer. 

1 cup yellow split pea lentils washed and soaked in water overnight . [soaking is not absolutely necessary . I cook lentils without soaking as well. What soaking does is - it makes lentils go easy on our digestion ]

3 cups water

2 medium Tomatoes finely chopped

1 medium Onion finely chopped

1 cup frozen or fresh mixed veggies

1 Tsp Cumin

½ Tsp Turmeric

¼ Tsp Aesafoetida

¼ Tsp Coriander

2 Tbsp ghee(Clarified Butter) OR Oil

Salt to taste (For this recipe I used ½ tsp salt)

Put the Pressure Cooker on Heat. Add the ghee/oil. Let it heat up. Add cumin,coriander,aesafoetida and turmeric.When the cumin seeds start cracking, add the onion . When onion turns pink, add the tomatoes ,the lentils ,veggies,water,salt. Close the cooker. Heat on full flame to a whistle and then simmer the heat for another 4 whistles. Your lentils are ready !! Serve them with cooked rice or Roti !

Note:If you don't have a pressure cooker or a rice cooker, You can easily cook these lentils in a covered pan. Keep stirring every 10 minutes on low heat. Cook till tender !
