
This is a wonderful dish which can be eaten just like that or with any kind of bread or rice ! And I just love the Coconut flavor !!
Ingredients:
1 pound String Beans
2 medium Potatoes
2 Tbsp Canola or Olive Oil
½ cup shredded Coconut
½ Teaspoon Mustard Seeds
½ Teaspoon Cumin Seeds
1 Tbsp Powdered Coriander
½ tsp Salt
- Heat up Oil in the Pan.
- Add Cumin,Mustard,Coconut,Coriander to the Oil. Let the Cumin and Mustard seeds start making crackeling sound .
- Add Potatoes and Beans.Add Salt . Mix in and Cover.
- Keep moving the veggies upside down every 10 minutes to prevent them sticking to the bottom of the pan .
- Switch off the heat after 30 minutes and let it sit covered for another 10 minutes.
Your Coco-Nutty Beans are ready to eat !
